The holidays have come and gone, and many of us are feeling a little heavier after all the festivities. This refreshing detox salad comes together in minutes, is hearty enough to keep you full, and is filled with antioxidants and fiber. My new year’s resolutions might actually stand a chance! I used a grain blend of kamut, barley and spelt, but you can use what ever grain you prefer.

 

Serves 4

Detox Salad

Half a cauliflower

1 can chickpeas, rinsed and drained

1 large orange carrot

1 large yellow carrot

2 cups cooked grains

small handful of fresh parsley, finely chopped

3 green onion stalks, finely chopped

Turmeric-Lemon Dressing

Juice and zest of one lemon

3 tablespoons high-quality extra virgin olive oil

1.5 tablespoons apple cider vinegar

1 tablespoon water

1 tablespoon honey

1 levelled teaspoon ground turmeric

1/2 inch piece of fresh ginger, peeled and grated

1/2 teaspoon dill

pinch of cayenne pepper

 

Directions

For the Salad:

Wash and trim veggies. Grate Cauliflower and carrots into large bowl. Add rest of ingredients and toss.

For the Dressing:

Whisk all ingredients together and pour over salad. Toss to combine.
