This is a beautifully simple recipe- fresh mango is pureed with coconut milk and curry powder, creating a refreshing sweet and spicy dip. This dip is perfect for your next get together, and takes mere minutes from start to table. If you like, omit the curry and Sriracha, and double the honey for a sweet version.
Mango-Lime Curry Dip
1/2 cup full-fat coconut milk
1 lime, zest and juice
1 tablespoon honey
2 teaspoons yellow curry powder
1 teaspoon Sriracha
1/4 teaspoon fine sea salt
Add all ingredients to blender or food processor and puree until smooth. Refrigerate until use. Serve with your favourite veggies and crackers. Enjoy!
