Grilled Vegetable Fajitas

  • 1 red pepper
  • 1 green pepper
  • 1 Portobello mushroom
  • 1 yellow onion
  • 3 cloves garlic
  • 3 tbsp Pete’s Own olive oil (divided)
  • 3 tbsp fajita seasoning (we love Cape Herb & Spice taco seasoning)
  • 15 oz can of black beans
  • 12 tortillas
  • Sour cream for garnish
  • Pete’s Housemade Guacamole and Salsa for garnish

Heat grill to medium high. Wash vegetables. Slice the peppers and mushrooms into strips. Mince 3 cloves garlic and set aside.

In a large bowl toss the vegetables with the garlic, 2 tbsp Pete’s Own olive oil, 2 tbsp fajita seasoning and ½ tsp of salt.

Drain and rinse the beans and place them in a small pan on grill, add remaining olive oil, fajita mix and ½ tsp of salt

Place veggies in a grill pan and cook for 10 minutes or until tender.

Serve veggies in a tortilla with beans, sour cream, Pete’s Housemade Guacamole and Pete’s Housemade Salsa.

This recipe can be adapted to use Tofu, Shrimp, Chicken or Beef!

Chefs Tip: Serve with a slice of lime, Pete’s Own Nacho Chips and extra guacamole on the side.
