Moscow Mule Chicken

with Orange and Fennel Salad

Moscow Mule Chicken:

  • 4 boneless skinless chicken breasts
  • Cedar Plank
  • 2 Cans or bottles of ginger beer
  • ½ Cucumber
  • 2oz Vodka
  • 3 Limes

Chicken Rub:

  • Crushed long Black Pepper
  • Chili powder
  • Garlic powder
  • Onion powder
  • Course salt

Place chicken breasts in a bowl, pour in ginger beer

Squeeze juice from 2 limes and place squeezed limes in bowl, cut cucumber into slices and place in bowl, add 2oz of vodka.

Mix around chicken with marinade. Ensure all chicken is submerged in marinade. Cover and let rest in refrigerator for 6hrs.

In small bowl mix rub ingredients together.

When breasts are done marinating take out breasts and lightly pat dry. Take rub mixture and rub all over chicken.

To prepare cedar plank soak in water for at least 2 to 4hrs. When ready to cook chicken place plank on hot grill. When it begins to smoke flip and brush top with oil. Once this is completed place chicken on plank and cook until they reach an internal temperature of 165 degrees. Once temperature is reached place chicken directly on grill to create grill marks.

Once chicken is done cooking slice on a bias and place on salad.

Citrus and Fennel Salad

  • 8oz of garden green lettuce
  • 2 oranges, peeled and cut into slices
  • 1 Fennel bulb
  • Kalamata Olives (pitted) 8-10 cut in half
  • Mix all ingredients together in a salad bowl.

Citrus Vinaigrette:

  • ¼ cup of orange juice
  • ¼ cup of vegetable oil
  • 2 tablespoons of lemon juice
  • 2 tablespoons rice wine vinegar
  • 2 teaspoons of sugar
  • 1 tablespoon Dijon mustard
  • Salt & Pepper to taste

Whisk all vinaigrette ingredients together.
