Melon Skewers
Avoid turning on your oven with these kid and adult friendly skewers. Canary Melon, similar in taste to Cantaloupe adds an extra sweetness, the dragon fruit, similar in taste to a grape, adds fun texture, the cheese and salt help to keep the dish savoury all rounded out from the freshness of the herbs. Make the night ahead and drizzle with balsamic reduction before serving.
Makes approx.. 12 short or 6 long skewers
Note: Try to keep all melon and cheese cubed to a similar size
2 dragon fruit, skin removed and cubed
1 canary melon, skin and seeds removed, cubed
1 baby watermelon, skin removed and cubed
1 bunch mint, picked and washed
1 bunch basil, picked and washed
1 200 g package Woolwich Dairy Goats Milk Feta (Must be a dry packed, firm feta or cheese, to hold its shape when cut and skewered)
1 bottle (use desired amount) Nonna Pias Balsamic Glaze, I used Chili Lime flavour
Salt to taste
Place ingredients on skewers in desired order, drizzle with balsamic reduction, sprinkle with salt, enjoy.
