One Ingredient Banana Ice Cream

This deceivingly healthy and delicious sundae recipe is vegan, gluten free and paleo.

Serves: 4-6

Preparation time: 10 minutes active time, 2 hours 10 minutes total time

What you’ll need:

  • 6 ripe bananas
  • air tight freezer safe container
  • food processor, or high powered blender
  • toppings like: chocolate chips, toasted coconut, nuts, chia seeds, honey, chocolate sauce, strawberries, raspberries, cubed dragon fruit, caramel, jam etc.

Instructions:

  • Peel bananas and cut them into 1 inch pieces, then put in an airtight container and freeze for 2 hours
  • After the two hours are up, place frozen banana pieces into the food processor. Blend until just smooth
  • Do not overwork the banana mixture as it will get too thin and soupy. The creamy texture of this vegan, gluten-free, and paleo ice cream depends on the bananas being still frozen, and creamy
  • Serve immediately
  • If the mixture seems too thin, you can put this back into the freezer for 1 hour or so, with waxed paper pressed to the top to prevent ice crystals from forming, then serve
  • Place all the toppings for the sundae into small bowls for kids, or friends to garnish themselves
