Perfect Roast Potatoes 

These British style roasted potatoes are the perfect way to switch up everyone’s favourite side dish this holiday season. 

Serves 4-6 side servings 

Ingredients:

  • 6 large russet potatoes, peeled and cut into eighths 
  • Salt 
  • Pepper 
  • 1/4 cup butter, melted 
  • Fresh thyme, chopped

In a large stock pot, place potatoes in cold, salted water and bring to a boil over high heat. Lower to medium high and allow to cook 5-7 minutes or until potatoes are soft but still have some resistance. Drain potatoes and toss in colander a few times, to create rough edges. Allow potatoes to dry for 5 minutes. Meanwhile Preheat oven to 400’F. Toss potatoes in butter, season lightly and place on a greased cooking tray. Squash potatoes lightly with back on spoon, to flatten slightly. Roast for 20-30 minutes, flipping once, until golden and crispy on the outside. Season to taste and add thyme before serving. Enjoy!
