TIRAMISU FOR TWO
The perfect romantic Valentine’s Day dessert, made for two!
- 1 egg separated
- 2 Tbsp. sugar
- 1/2 cup mascarpone
- 9 Lady Fingers
- Double shot of espresso or strong brewed coffee
- Splash of coffee liqueur
- Cocoa powder, to dust
In a stand mixer or with a whisk, whip the egg white until stiff peaks form and gently transfer to another bowl.
In the mixer bowl, add the egg yolk and sugar and beat/whisk until smooth and pale yellow. Next, add the mascarpone and continue to whip until well combined and fluffy. Very gently fold in the egg whites to the yolk/mascarpone mixture and set aside.
Cut 8 lady finger into about 8 cubes and quickly submerge in a shallow bowl with the espresso and the liqueur – be careful to not let them get too soggy.
Now it’s time to build your two tiramisus in small rocks glasses or small bowls.
Start with a layer the coffee-soaked lady fingers, then the cream mixture and a quick dusting of unsweetened cocoa powder. Repeat this process until all prepared ingredients are used while making sure to end with the cream mixture.
Cut the final lady finger in half and dunk in the coffee mixture and then stick in the top to garnish with a final dusting of cocoa.
