
Blueberry Baby Dutch Pancake and Toasted Coconut Chips
(Serves 4)
Ingredients:
● 4 large eggs
● 1 cup of whole milk
● 1 cup of flour
● ¼ of cane sugar (or white)
● 2 inch of vanilla bean (or 1 tsp of vanilla extract)
● pinch of salt
Toppings:
● 1 pint of blueberries
● 40 grams of coconut chips
● 1 tsp of maple syrup
● sprinkle of icing sugar
Preheat oven to 425
Grease a circular 12” oven safe pan with oil and place in the oven for 10 minutes. While the pan is in the oven, combine all ingredients in a blender or food processor until well combined (runny). Once preheated add mixture to pan, top with blueberries and bake for 15-20 minutes (until edges are browned).
Meanwhile, toss coconut chips in maple syrup and bake on a separate pan for five minutes (or until golden brown).
Once removed from the oven, top with coconut chips, sprinkle icing sugar overtop and enjoy. Best served warm!
