  • 4 egg yolks
  • 1 tsp lemon juice
  • 1/2 cup melted butter or dairy free alternative
  • Salt
  • Hot sauce, optional

Over a pot of barely simmering water, whisk together egg yolks and lemon juice in a large bowl. Slowly whisk in melted butter and beat until light, frothy and airy. Season and serve immediately.

Homemade Scones:

  • ¾ cup cold butter, cubed
  • 1 cup buttermilk
  • 1 egg
  • Extra salt for garnish
  • 1 egg + 1 tablespoon water, mixed

Mix flour, baking soda, baking powder, sugar and salt together. Cut in butter until pea-size clumps form. Whisk together egg and milk and add to flour mixture. Mix together gently, fold in cheese and chives. Form into ball, press/roll out slightly on a floured surface. Cut into desired shapes. Place on parchment lined sheet pan.
