Chocolate Cherry Gelato Cookie Sandwiches

Ingredients:

  • 1 container Fiasco Vanilla Bean Gelato
  • 1 1/4 cups white sugar
  • 1 cup butter, softened
  • 1/4 cup milk
  • 1 egg
  • 1/4 tsp almond extract
  • 1 3/4 cup flour
  • 1/3 cup cocoa powder
  • 1/2 tsp baking soda
  • 1 cup quick oats
  • 1 cup dark chocolate chips
  • 1 cup dried cherries

Cream butter and sugar together until light and fluffy. Add milk slowly. Add egg and extract.

Add dry ingredients and beat until just combined. Fold in chips and cherries. 

Scoop rounded tablespoons, flatten slightly.

Bake at 350’F 10-12 minutes. Allow to cool.

Sandwich two cookies with slightly softened gelato and place in freezer, wrapped until chilled through.
