Rack of Lamb with Pesto Sauce
Rack of Lamb with Pesto Sauce:
Ingredients:
- 1/2 cup walnuts, toasted
- 1 cup fresh mint, packed
- 1 cup fresh basil, packed
- 2 cloves garlic, minced
- Zest and juice of 1 orange
- 1/4-1/2 cup good quality olive oil
- Salt and pepper to taste
Place walnuts and garlic in bowl of food processor. Pulse until it forms crumb. Add herbs, zest and juice, salt and pepper, pulse until combined. Turn on lowest speed, slowly drizzle in olive oil until desired consistency is formed. Serve with lamb. Enjoy!
