It’s finally barbecue season, and with that always comes beer season. This recipe celebrates both, combining the legendary Nine Locks Porter (available at Cristall Wine Merchants, next to the Bedford Pete’s Fine Foods location). If you’ve never made your own barbecue sauce after you’ve tried this, nothing else will quite be the same. Enjoy!
1 tablespoon olive oil
1/4 cup onion, finely chopped
2 tablespoons garlic, finely chopped
2 tablespoons Worcestershire sauce
2 cups ketchup
2 tablespoons Jason Lynch Dijon Mustard
1 tablespoon molasses
1 tablespoon brown sugar
1/2 teaspoon salt
1/2 teaspoon pepper
1 cup Nine Locks Porter beer
In a medium saucepan, sauté the onion and garlic in the olive oil until soft and translucent. Add the Worcestershire, ketchup, mustard, molasses, brown sugar, salt and pepper. Stir together. Once the mixture comes to a boil, decrease the heat and allow to simmer for 30 minutes. Pour in the beer, and bring back up to a boil again. Remove from the heat and allow to cool. Transfer to an airtight container.
