
Rosemary Sparkler
It’s easy to make a nice sparkling wine drink with either soda, tonic or sparkling wine if you have a delicious syrup, like burnt rosemary simple syrup found in this recipe. You’ll have enough around for the holidays, and it will keep for a few weeks in the fridge.
Ingredients for Burnt Rosemary Simple syrup:
1 cup sugar
1/2 cup water
6-8 rosemary sticks, burnt
Instructions for Burnt Rosemary Simple syrup:
Using a torch, or even a barbecue lighter, burn the segments of rosemary and blow out any flames that arise. Set them aside on a plate. In a saucepan, combine water, sugar, and rosemary over medium to low heat. Stir until sugar has dissolved into the water and the liquid has slightly thickened.
Ingredients for Rosemary Sparkler:
5oz Fever Tree Tonic Water
1oz burnt rosemary simple syrup
(For alternate variation replace 3 oz of tonic water with cava or dry sparkling wine)
Instructions for Rosemary Sparkler:
Add syrup to a wine glass, then the tonic. Garnish with a sprig of rosemary and/or an orange twist.
